I have been cooking a lot of Thai food ever since my aunt introduced it to me about a year ago. Most of my recipes come from a Thai cookbook that she gave me. This is the first one to come from another source — another favourite of mine, Chef Michael Smith. He is Canadian (from Prince Edward Island) and I love his recipes! This was no exception. Easy to make and incredibly delicious.
My one complaint about the soup was that it was a bit too curry-like and not enough like a soup. This was my fault. I didn’t add enough chicken stock and the result was that the soup was very creamy and rich. My boyfriend likes it this way, but I would’ve preferred it to be a little thinner. I’ll add a bit more next time.
