Stuffed Red Peppers

The inspiration for this post comes from this one at smitten kitchen. I made these on a Sunday evening, as I happened to have two red peppers on hand, plus couscous, chickpeas, and feta. It’s very easy to make, plus healthy and delicious as well. One pepper each was enough as the filling mixture is, well, filling!

You’ll see that the recipe calls for a medley of vegetables as well as the couscous mixture. Unfortunately, I didn’t have many of the vegetables on hand, and as it was a Sunday, I couldn’t buy them either! Fortunately this is an extremely versatile dish – you can put almost anything in these. I used couscous, chickpeas, feta, tomatoes, and olives, plus some spices.
