This isn’t the healthiest meal out there, let’s be honest! But it is delicious and comforting and nice every once in a while. Sometimes you are just in the mood for something cheesy and this definitely hits the spot. I saw the recipe in the July 2011 Waitrose magazine (available online here) and had to make it.
The mac & cheese is extremely easy and takes no time at all to make. I made a few tiny substitutions, mainly to do with the cheese. Without cheddar, we used a combination of Parmesan, feta & light Gouda.
We had it with a salad, pictured below.
