Cauliflower is definitely not one of my favourite vegetables; on its own, I find it rather bland. However, this soup was delicious. It’s also extremely easy to make – the most labourious part was cutting up the cauliflower! All you do is add the chopped cauliflower to a bit of butter or oil, and then add stock, cream, and seasoning and simmer. Easy and tasty (especially with a bit of cheese on top – it melts in nicely)! Another notable thing is that this soup was VERY economical to make. It was about €2.50 for the cream and cauliflower combined.
