Chicken Tom Yum Soup

Yum indeed!

All throughout October, Chatelaine magazine featured a soup recipe a day (NB: November is baking!). I bookmarked quite a few of them — as fall closes in on us here in Germany, soups are one of my favourite things to make.

The soup is very easy to prepare and was the perfect dinner for us — it’s no/low carb but still very tasty and filling. I omitted the shrimp due to the high cost and poor quality of it here, but it worked fine with just the chicken. The different veggies make for varying textures, and it has just the right amount of kick to warm you up on a cold autumn evening!
