Arroz con Pollo translates to rice with chicken, which is exactly what this is. More specifically, it’s rice and chicken in tomatoes, with olives sprinkled on top. I came across the recipe on Joy the Baker. It looked like an easy, weeknight one-pot meal and I decided to give it a try.
It was very easy to prepare, but I’d rate this meal only average overall. The reason for that is because I was expecting more flavour; it was a little bland. Of course, one major factor in this is the quality of the tomatoes — if I’d been using fresh tomatoes out of the garden, I know it would have a lot more depth.
