This has been one of my favourite discoveries recently: tortilla pizza. It’s so simple yet brilliant, and one of those things you can’t believe you’d never thought of before.
The premise is very simple: create a pizza using a tortilla as your base, and dress it with whatever you’d like. We used tomato paste, mushrooms, tomatoes, ham, feta, and a bit of cheddar. Yum! Next time I think I’ll use an olive oil base,
The only real thing to pay attention to is the way you cook it. Kate used a cast iron skillet. In the absence of one, I followed her instructions and cooked the pizzas on a raised rack on top of a normal baking sheet.
