Catalan-style Chickpeas with Tomatoes & Almonds

Chickpeas are one of my favourite foods and I am always looking for new ways to eat them. In contrast to my previous post, this is a quick, easy dish that’s easy to prepare and very tasty. It comes from The Traveler’s Lunchbox, a longtime favourite of mine, and is actually a recipe I’ve had bookmarked for quite some time now.

The dish is composed of tomatoes, garlic, onion, saffron (which I didn’t use), almonds, and chickpeas. It’s garnished with parsley but chopped coriander would have worked well too. As you may be able to tell from the photo, I burnt some of the almonds but otherwise the dish turned out well. It’s perfect for a quick lunch or easy evening meal to make and is flavourful with a minimum amount of ingredients.
