What to make when it’s 30 degrees

Just a few days ago, I wrote that England was struggling to show any signs of summer. I am now eating my words as the temperature is expected to reach 30 degrees in London today and we’ve enjoyed amazingly hot and beautiful weather for the past couple of days. When it’s this hot, the last thing anyone wants to do is have the oven on for hours on end. So, I thought I would post a brief round-up of some of my favourite no- or low-cooking, refreshing dishes for summer:

Quinoa, corn, & avocado salad
Roasted vegetable pasta with mint and yogurt
Tortilla pizza
Tofu noodle bowl
Avocado carpaccio
Thai satay rice bowl

For party/potluck items, you can’t go wrong with tomato bruschetta and goat cheese twists!

And finally, a spinach smoothie (make sure you put in lots of ice!) to cool you down.
