I’ve had this salad bookmarked for ages and finally got around to making it recently for the first time, a couple of days after we arrived back in London. I thought it looked and sounded good but it exceeded my expectations — it was incredible! I think the key is fresh herbs and lots of them. I made it with 3 large carrots and it was enough for the two of us for lunch — very filling.
I made a few modifications. I did not use any nuts or oranges, the former because I didn’t have any (would recommend sunflower or pumpkin though) and the latter because I don’t really like oranges in my salads. I also substituted the pappadums for crumbled tortilla chips and it worked really well.
I’ve made it since as a side dish but as I said above it works as a meal on its own or a potluck item. Highly recommended!
