Vietnamese Chicken Salad

This is a great way to use up leftover chicken. I made it on a Monday for lunch using leftovers from a roast that we’d had the night before. The recipe is another that caught my eye on Saveur‘s website.

In my version I included rice and also left out the cabbage in favour of carrots and red peppers.

Although I liked this, the dressing was little too sweet for me. It was the first time the sugar in the dressing really stood out for me, and not in a good way. H. didn’t mind, but in future I would decrease the amount of sugar. 🙂
