Quinoa, Corn, & Avocado Salad

If you like quinoa, this is the perfect summer BBQ salad.

The recipe showed up on my ever-expanding Google Reader and is from a blog called Ezra Pound Cake.

This is only the second time I’ve cooked with quinoa (the first being quinoa cakes), and the result was much better than the first attempt.

This salad was my favourite I’ve had in a long time — absolutely delicious. When I first tasted it, the lime juice in the dressing was too overpowering for my tastes. I added a little more oil and that evened it out a bit. The texture is gorgeous {slightly pretentious word to describe texture but it really is} with the slight crunchiness of the corn. NB: if you don’t like cilantro, this is not the salad for you!

It made enough for two meals (we had it with hamburgers one night for supper and then the salad on its own the next day). Will definitely be making this salad again this summer.
